Author: Martha | Simple Nourished Living
Recipe type: Dessert
Serves: 8

2 pounds strawberries, stemmed and sliced
1 tablespoons sugar
8-ounces reduced-fat cream cheese
½ cup plain nonfat Greek yogurt
1 teaspoon vanilla
½ cup confectioners’ sugar
1½ cups frozen nonfat whipped topping, thawed, divided
⅔ cup graham cracker crumbs

In bowl, sprinkle the stemmed and sliced strawberries with sugar. Gently toss to combine and set aside while you make the "cheesecake cream."

In mixing bowl, beat cream cheese, yogurt, and confectioners sugar until smooth. Gently stir in ½ cup whipped topping.

To assemble parfaits, divide the ingredients among 8 dishes or glasses. Layer graham cracker crumbs, cream cheese filling, and strawberries. Repeat layers and end with a dollop of whipped topping.

Nutritional Estimates Per Serving (1/8th recipe): 188 calories, 7g fat, 4g sat fat, 25g carbs, 1g fiber, 6g protein. Dietary Exchanges: 1½ other carbohydrate, 1 lean meat, 1 fat, *5 PointsPlus, *7 SmartPoints

Variations: Any berries or a combination may be used. Any time a recipe calls for yogurt or Greek yogurt, either is fine. I like Greek yogurt as it is a richer, creamier and thicker yogurt.
