6 large bell peppers
1 small onion
2 cloves garlic
1 lb ground beef (1/2lb 80% lean. 1/2lb 85% lean)
3/4 lg can crushed tomatoes
1 cup cooked cooked brown rice
6 think (.5 oz) slices part skim mozzarella cheese
Oregano, basil, salt & pepper to taste


Cut tops off tops of peppers and remove seeds, chop tops of peppers (discard stems) and sauté with minced garlic and chopped onion until lightly browned. Steam peppers in microwave or steamer for about 6 minutes or until tender but not mushy. Brown beef and drain. Combine beef, rice, browned veggies, and tomatoes until mixed thoroughly. Add seasonings to taste and stir. Place tender peppers in baking dish and fill with rice/meat/veggie mixture. Top with one slice of cheese per pepper and tuck cheese edges inside pepper as pictured. Bake at 350 degrees for 10 minutes or until heated through and cheese begins to brown. If you have extra filling serve it on the side. Enjoy!
