Diabetic Crockpot Sweet & Sour Pork PointsPlus+ = 8



Ingredients:

1 (1-1/2 lb) boneless pork loin, cut into 1 inch pieces
1 onion, chopped
3/4 cup barbecue sauce
1 (14-1/2 oz) can chicken broth
1 (8 oz) can pineapple chunks in juice, drained
1 green bell pepper, chopped
2 cups instant white rice, uncooked

Directions:

1. Place the meat in crock pot and top with onions.

2. Add in the barbecue sauce and broth; cover with lid. Cook on LOW 6 to 7 hours or
HIGH 4 hours.

3. Stir in remaining ingredients. Cook, covered on LOW 30 minutes or until rice is tender.




Yield: 6 equal size servings.
